肉骨茶在東南亞地區很受歡迎，尤其是馬來西亞，新加坡等。用帶肉連骨跟一些中藥，主要是當歸，玉竹，當參，杞子等，配合一些香料如八角，甘草，蒜頭，熬煮出來的湯水。起名叫“茶”，相信是當中含中藥的緣故。其實是一道補身的湯水。話說以前南洋的礦場工人就以肉骨和不昂貴的中藥熬出的湯水作驅寒補身之用。輾轉流傳開去，後人煮肉骨茶更加入不少其他材料，或甚至一些昂貴的海味。
